Session description

Discover how a student-driven, technology-based learning project leads students to explore obesity and Nutrition challenges in Mexico. Using AI students investigate their own eating habits, patterns, and community health issues, and discover how nutrition affects well-being and obesity-related illnesses aligning with the UN's Sustainable Development Goals.

Outline

Throughout the session the audience will be directly engaged in the interactive demonstrations as they will be invited to see how the student presenters used AI, developed projections and prototypes, explored possible solutions, and created their awareness campaings. Attendees will be able to ask questions, participate in demonstations and dig deeper in how techonology was used in the project. The participants are invited to participate in small group discussions and activities. They are also invited to implement similar health related projects in their own classroom and foster a community of action.

The stucture will be as follows:

Introduction to the issue of childhood obesity and nutrition around the globe. Students will present a general view of the state of the world today regarding this epidemic. Students will move on to present the siguaton in Mexico. Students will introduce the topic through videos, national data and its most common risks (15 minutes)

Examination of nutrition habits and obesity related illnesses. Students will present the results of their own surveys and statistics conducted in their classroom, the school and in their community. They will share the finding from their own data and compare it with national data, provided by technological tools and AI. (15 minutes)

Integration of technology. Young presenters will demonstrate how the use of tools like google forms, excel and AI-based apps were used to gather information, organize data and visualize their own results, building critical thinking and scientific literacy. (15 minutes)

Creation of digital solutions and wellness campaigns. Students will create their creative projects, including posters, videos, infographics, and specially awareness campaigns (with Scratch and other tools). (20 minutes)

Reflections. Students will present their conclusions and reflect on how this project changed their understanding of nutrition and well-being. They will also present how this project has inspired them to become young leaders for sustainable health and community change.(15 minutes)

Hand's on interaction. Attendees will be able to experience first hand the student's final products, and interact with the student presenters in a Q&A session. (10 minutes)

Total time of presentation: 1 hour 30 minutes.

Outcomes

After this session, attendees will understand the urgent need to educational action to address childhood obesity and nutrition challenges in Mexico and around the globe, growing issue affecting children's physical, emotional and academic well-being. Attendees will grasp how technology can be used to help students analyze their own nutrition habits, identify health risks such as diabetes, hypertension, and heart disease, and create meaningful student-led initiatives for healthier living.

Attendees will explore how educational technology and AI supports interdisciplinary learning, by combining science, health, and digital literacy, while empowering children to become advocates for well-being and sustainability.

They will also see how this project aligns with the UN's Sustainable Development Goals, such as SDG 2: Zero Hunger, SDG 3: Good Health and Well-being, SDG 4: Quality Education, and SDG 12: Responsible Consumption and Production, and the ISTE Standards for students, such as fostering responsible, informed, and digitally skilled young global citizens.

Attendees will take away:

Insight into how digital tools can help children gather, visualize, and interpret real data about nutrition, health, obesity related illnesses, and treatments.

Understanding of how educational technology and AI cna turn students into active researchers and presenters on real-life health issues using project-based learning.

Strategies for integrating health, science, and technology across different grade levels, genders and subjects to develop a well-rounded digital citizen.

Appreciation of student-generated products, such as data visualization, presentations, wellness campaigns, and awarness projects to demonstrate that young learners can become proactive health advocates in their schools and communitites.
